Oysters with mango & basil salsa

Elevate lunch with oysters topped with tropical salsa and a glass of bubbly.
Ingredients:
  • 1 large mango cheek, peeled, finely chopped
  • 1/2 small Lebanese cucumber, peeled, finely chopped
  • 20.00 ml finely chopped red onion
  • 5 large fresh basil leaves, torn
  • 12 (1 dozen) natural oysters (such as Sydney rock oysters), in the half shell
Instructions:
  • In a small bowl, mix together the mango, cucumber, onion, and basil. Season with salt and pepper to taste.
  • Place the oysters on a platter and generously top each one with the delicious mango mixture. Serve and enjoy!
