  • 21.00 gm light soy sauce
  • 5.00 gm caster sugar
  • Ground white pepper
  • Rock salt or ice, to serve
  • 24 Pacific oysters
  • 20.00 ml pickled ginger, drained
  • 6.00 gm toasted sesame seeds
Instructions:
  • Submerge the shallot in a bowl of chilled water and let it rest for 15 minutes until it curls.
  • Combine mirin, soy sauce, sugar, salt, and ground white pepper in a small bowl for a flavorful and savory sauce.
  • Begin by elegantly placing the rock salt or ice on a stunning serving platter. Artfully position the oysters on the platter. Drizzle the dressing over the oysters. Garnish each oyster with shallot, pickled ginger, and a sprinkle of sesame seeds.
