Oysters with pine nut dressing

Ingredients:
  • 36.40 gm extra virgin olive oil
  • 1/2 small brown onion, finely chopped
  • 40.00 ml pine nuts, roughly chopped
  • 1 garlic clove, crushed
  • 30.00 ml balsamic vinegar
  • 20.00 ml chopped fresh continental parsley
  • 2 tsp chopped fresh chives
  • Salt & freshly ground black pepper
  • Rock salt, to serve
  • 12 oysters in half shell, chilled
Instructions:
  • In a medium non-stick pan over medium heat, heat oil. Add onion, pine nuts, and garlic. Stir and cook for 2-3 minutes until onion is soft and pine nuts are golden. Remove from heat.
  • Combine balsamic vinegar, parsley, and chives in the pan. Mix thoroughly. Season with salt and pepper to taste.
  • Sprinkle the serving plate with rock salt and arrange the oysters on top. Drizzle with the pine nut dressing and serve promptly.
