Quickly sauté golden mushrooms for a delectable side dish.
Ingredients:
  • 60mls (1/4 cup) olive oil
  • 1 garlic clove, crushed
  • 4 (about 450g) mushroom flats, trimmed
  • 40.00 ml roughly chopped fresh Continental parsley
  • 50g 1/2 bunch) rocket, washed, trimmed
Instructions:
  • Mix 2 1/2 tablespoons of olive oil with garlic, salt, and pepper. Brush both sides of the mushrooms with the oil mixture. Heat the rest of the olive oil in a large frying pan over medium heat.
  • Add mushrooms to the pan, cooking for 2-3 minutes on each side until tender. Sprinkle with parsley and cook for an additional 30 seconds on each side. Serve mushrooms on plates, topped with rocket and a sprinkle of black pepper.
  • Pour the delicious pan juices over the dish and enjoy while hot.
