Pan-Seared Lemon Tilapia with Parmesan Pasta

Lemon-herb seasoned tilapia over Parmesan pasta for a light, fresh fish pasta dish.
Ingredients:
  • elbow macaroni
  • 1 tablespoon light olive oil
  • 0.25 cup freshly grated Parmesan cheese
  • 1 teaspoon lemon juice
  • 1 pinch garlic powder
  • 1 pinch dried basil
  • 1 pinch dried oregano
  • 1 pinch dried cilantro
  • 1 pinch salt and ground black pepper
  • 2 tablespoons light olive oil
  • 2 tilapia fillets
  • 1 tablespoon lemon juice
  • 0.125 teaspoon dried oregano
Instructions:
  • Begin cooking the pasta by bringing a saucepan of lightly salted water to a gentle boil. Add the macaroni and cook until al dente, about 8 minutes, stirring occasionally.
  • As the pasta simmers, prepare the fish by warming olive oil in a sizable skillet over medium heat. Season both sides of the tilapia with lemon juice, oregano, basil, cilantro, salt, and pepper. Carefully place the fillets in the skillet without overcrowding. Cook until the fish turns golden brown on the outside and is fully cooked and tender inside, for about 2 to 4 minutes on each side. Transfer the cooked fish to a plate.
  • To complete the pasta dish, simply drain the macaroni and return it to the saucepan. Drizzle with olive oil and gently toss to coat. Sprinkle Parmesan cheese over the pasta, followed by a flavorful blend of lemon juice, garlic powder, basil, oregano, cilantro, salt, and pepper.
  • Serve the pasta evenly between two plates and place a tilapia fillet on top of each plate.
