Elevate fish with zesty lemon-butter sauce for a delicious dinner for seafood enthusiasts.
Ingredients:
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup fresh lemon juice
  • 3 tablespoons finely chopped shallots
  • 3/4 cup whipping (heavy) cream
  • 1 teaspoon grated lemon peel
  • 1/4 cup cold firm butter, cut into 4 pieces
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 4 skinless tilapia fillets or other medium-firm fish fillets (6 oz each)
  • 1 tablespoon vegetable oil
  • 1/4 cup chopped toasted hazelnuts (filberts) or almonds
Instructions:
  • In a 2-quart saucepan over medium-high heat, bring the wine, lemon juice, and shallots to a boil. Let it boil uncovered for 4 minutes, stirring occasionally, until the liquid is reduced by half.
  • Pour whipping cream into a pan and heat until boiling, stirring occasionally. Let it boil uncovered for 6 minutes, stirring occasionally, until the sauce thickens and reduces to about 1/2 cup. Remove from heat and stir in lemon peel. Gradually whisk in butter one piece at a time, ensuring each piece is completely melted before adding the next. Once all the butter is incorporated, mix in 1/4 teaspoon salt and white pepper. Keep warm by covering the sauce.
  • Season fish with a pinch of salt and let it sit.
  • In a large nonstick skillet, heat oil over medium-high heat until hot and shimmering. Add fish and cook for 3 minutes on each side, or until golden brown on the edges and easily flakes with a fork.
  • Garnish fish with sauce and nuts before serving.
