Mediterranean-inspired stuffed salmon with sun-dried tomatoes, feta, and artichokes for a delicious and simple weeknight dinner.
Ingredients:
  • 4 (8 ounce) salmon fillets
  • 4 cups chopped fresh spinach
  • 0.5 cup sun-dried tomatoes packed in oil, drained and chopped
  • 0.5 cup artichoke hearts, drained and chopped
  • 0.25 cup crumbled feta cheese
  • 1 pinch garlic powder, or to taste
Instructions:
  • Create a shallow horizontal incision in the center of each salmon fillet without cutting completely through.
  • 1. Fill a large bowl with ice water. 2. In a large pot, bring lightly salted water to a boil. 3. Cook spinach uncovered for about 40 seconds until tender. 4. Drain in a colander, then plunge into the ice water for a few minutes to halt the cooking. 5. Drain well and then transfer to a bowl.
  • Combine sun-dried tomatoes, artichokes, and feta cheese with the blanched spinach. Stuff the mixture evenly into the salmon "pockets." Season the fillets with garlic powder, salt, and pepper.
  • Preheat a cast iron skillet over medium heat. Add salmon fillets, skin-side down, and sear for 5 minutes. Carefully flip and sear for an additional 5 minutes. Finish cooking by flipping once more, cooking for about 5 more minutes.
