Paprika beef skewers on parsley couscous

Ingredients:
  • 18.40 gm vegetable oil
  • 1 large brown onion, halved, finely chopped
  • 1 garlic clove, crushed
  • 800g beef mince
  • 10.00 gm Hungarian paprika
  • Salt & freshly ground black pepper
  • 240g (1 1/4 cups) couscous
  • 20g butter
  • 375ml (1 1/2 cups) boiling water
  • 125.00 ml loosely packed coarsely chopped fresh continental parsley
  • 3 green shallots, ends trimmed, chopped
  • Natural yoghurt, to serve
Instructions:
  • In a hot frying pan, sizzle onion and garlic in oil for 2 minutes until onion softens.
  • Mix together the onion mixture, beef, and paprika, then season with salt and pepper. Divide the mince mixture into 16 portions and form into 6cm balls. Thread 2 balls onto each skewer, place them on a tray, cover with plastic wrap, and chill in the fridge for 30 minutes.
  • Preheat a non-stick skillet over medium-high heat, then cook the beef skewers, turning occasionally, for 5 minutes until they are golden brown and fully cooked.
  • In a heatproof bowl, mix couscous and butter together. Pour boiling water over the mixture and stir gently with a fork. Cover and let it sit for 5 minutes until the liquid is absorbed. Fluff the couscous with a fork. Add parsley and shallot, season with salt and pepper, and stir until combined.
  • Divide the couscous evenly onto plates. Add the skewers on top and serve with a dollop of yogurt.
