Passionfruit curd pie

Indulge in this irresistible passionfruit meringue pie with extra curd for endless delicious creations.
Ingredients:
  • 200g plain sweet biscuits
  • 125g butter, melted
  • 300ml thickened cream, whipped
  • 2 passionfruit, halved, to serve
  • 107.50 gm caster sugar
  • 86.63 gm lemon juice
  • 3 passionfruit, halved
  • 150g butter, chopped
  • 40.00 gm boiling water
  • 6.00 gm powdered gelatine
Instructions:
  • Pulse biscuits until finely crushed. Add butter and pulse until mixed. Press the mixture onto the base and sides of a 3cm-deep, 23cm round fluted flan tin with a removable base. Chill in the refrigerator for 30 minutes.
  • While waiting, prepare the Passionfruit curd by combining sugar, lemon juice, passionfruit pulp, and butter in a heatproof bowl. Set the bowl over a pan of simmering water, ensuring it doesn't touch the water. Continuously stir with a wooden spoon for 5 minutes until the sugar dissolves. Take off the heat, whisk in the eggs, and then return to heat. Cook and stir for 12 to 15 minutes until the mixture thickens and coats the back of the spoon. Remove from heat.
  • Pour boiling water into a heatproof jug and sprinkle gelatine over it. Use a fork to stir until dissolved, then add to the passionfruit mixture, stirring to combine. Allow to cool for 10 minutes.
  • Drizzle curd over biscuit base. Chill overnight until firm. Finish with fluffy whipped cream and tangy passionfruit pulp. Serve and enjoy.
