Passionfruit sorbet

Passionfruit adds a tropical and vibrant twist to desserts!
Ingredients:
  • 170g can passionfruit pulp in syrup
  • 215.00 gm caster sugar
  • 1 eggwhite
Instructions:
  • Separate passionfruit syrup from seeds by straining. Combine sugar and 2 1/2 cups cold water in a saucepan over medium heat. Stir for 5 minutes until sugar dissolves. Bring to a boil, then simmer on low for 5 minutes until slightly thickened. Transfer to a heatproof bowl, mix in reserved syrup, and let cool fully.
  • Spread the mixture evenly in a 16cm x 26cm slice pan until smooth. Seal with plastic wrap and freeze for about 3 hours, or until it's nearly set.
  • Transfer the mixture to a food processor and combine with the egg white until smooth. Pour the mixture into a 6cm-deep, 9cm x 19cm dish or loaf pan. Stir in the reserved seeds. Freeze overnight or until firm. Allow to stand for 5 minutes before serving.
