Whisk together eggs, spinach, matzo, salt, pepper, and nutmeg, then cook in a skillet for a delicious open-faced omelette.
Ingredients:
  • 2 (10 ounce) packages frozen chopped spinach
  • 3 matzo crackers
  • 4 eggs, beaten
  • salt and pepper to taste
  • 1 pinch ground nutmeg
  • 3 tablespoons butter
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • In a saucepan, gently warm the spinach with 1/2 cup of water until fully thawed. Then strain the spinach, keeping half of the liquid for later use.
  • Crumble the matzo into a medium mixing bowl, pour the spinach and remaining liquid over them. Mix until matzo soften. Stir in Parmesan, eggs, salt, nutmeg, and pepper.
  • In a 12-inch skillet, melt the margarine and add the spinach mixture. Cook on medium heat, uncovered, for 5 minutes per side. Sprinkle with grated Parmesan and serve hot.
