Savor the flavors of garlic, onion, and carrot seasoned with parsley, basil, and oregano, simmered with tomatoes and cannellini beans. Mix buttery Parmesan-coated macaroni for a hearty meal.
Ingredients:
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1 carrot, finely chopped
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 4 tablespoons olive oil
  • 1 (14.5 ounce) can whole peeled tomatoes
  • 2 cups cooked cannellini beans, drained and rinsed
  • 8 ounces macaroni
  • 2 tablespoons butter
  • 0.25 cup grated Parmesan cheese
  • salt and pepper to taste
Instructions:
  • Saute garlic, onion, carrot, parsley, basil, and oregano in olive oil until the onions are soft in a large skillet.
  • Add the tomatoes with 1/4 cup of their juices, salt, and pepper. Cover and simmer, stirring occasionally, until vegetables are tender, about 10 minutes. Then add the cannellini beans, cover, and simmer for an additional 20 minutes.
  • Prepare macaroni as instructed on the package, then drain and combine with butter and Parmesan cheese. Mix with cannellini bean mixture and serve promptly. Sprinkle with extra Parmesan cheese for added flavor, if preferred.
