Delicious Italian pasta with zucchini, zucchini blossoms, and clams captures the essence of summer by the sea.
Ingredients:
  • 2 pounds clams in shell, scrubbed
  • 1 (16 ounce) package spaghetti
  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic
  • 0.25 cup dry white wine
  • 1 zucchini, cubed
  • 10 zucchini blossoms, or more to taste
  • salt and freshly ground black pepper to taste
  • 1 pinch red pepper flakes
  • 1 bunch fresh parsley, chopped
Instructions:
  • Submerge clams in a refreshing saltwater bath for 1 hour. Remove and rinse.
  • Boil a large pot of lightly salted water. Add the spaghetti and cook until al dente, about 12 minutes. Drain.
  • While spaghetti cooks, sauté garlic in olive oil until fragrant. Add white wine and clams, cover, and cook until clams open. Remove clams from shells, saving the liquid. Stir in zucchini, zucchini blossoms, salt, red pepper flakes, and clam juice. Cook until zucchini is tender. Add clams and heat through. Mix in drained spaghetti and parsley. Season with pepper.
