Pasta With Turkey Meatballs and Roasted Vegetables

Try this delicious one-dish turkey meatball pasta with roasted veggies for a quick, satisfying meal in just 30 minutes.
Ingredients:
  • For the vegetables:
  • 3 medium (about 3/4 pound) zucchini, cut into half moons
  • 2 large (about 3/4 pound) red bell peppers, sliced into 1-inch strips
  • 1 medium yellow onion, sliced into half moons
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • For the meatballs:
  • 1 pound ground turkey
  • 1 large egg
  • 2 tablespoons mayonnaise
  • 1/2 cup plain bread crumbs
  • 1 teaspoon Italian Seasoning (or 1/4 teaspoon each dried oregano, basil, marjoram, and rosemary)
  • 1/4 teaspoon ground black pepper
  • For the pasta:
  • 1 pound any small shaped pasta, like orecchiette, bowties, or rotini
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh parsley, chopped
Instructions:
  • Preheat your oven to a toasty 425ºF and prepare 2 baking sheets with aluminum foil or silicone baking mats.
  • Prepare to roast the vegetables by coating them with the flavorful combination of olive oil and salt. Arrange them on a baking sheet in a uniform layer to achieve optimal roasting. Cook the vegetables in the oven for 30 minutes until they are perfectly tender and caramelized.
  • Prepare and start roasting the meatballs: Mix ground turkey, egg, mayonnaise, breadcrumbs, and seasonings in a bowl. Shape into 1-inch meatballs, then arrange on a baking sheet with space in between. Roast in the oven for 20 minutes while the vegetables cook.
  • While the vegetables and meatballs are in the oven, bring a large pot of salted water to a boil. Cook the pasta according to package instructions, then drain.
  • Combine the roasted vegetables, meatballs, and pasta in the pot. Mix in olive oil, lemon juice, and parsley. Serve hot.
