Ingredients:
  • 36.40 gm olive oil
  • 12 scallops (without roe)
  • Salt & freshly ground pepper
  • 3cm piece fresh ginger, peeled, finely grated
  • 21.00 gm lime juice
  • 100g snowpea sprouts, trimmed
  • 250.00 ml fresh mint leaves, torn
  • 600g paw paw, deseeded, cut into small wedges
Instructions:
  • In a hot non-stick pan, sear the scallops seasoned with salt and pepper in 2 teaspoons of oil for 1-2 minutes per side until perfectly cooked. Transfer the scallops to a plate once done.
  • Mix together the ginger, lime juice, and remaining oil in a small jug, then season the mixture with salt and pepper.
  • Combine the snowpea sprouts and mint, then distribute onto plates. Add the scallops and paw paw on top. Drizzle with dressing and serve promptly.
