Pea & feta salad

Minty pea salad with creamy feta.
Ingredients:
  • 215g (1 1/3 cups) shelled fresh peas
  • 180g snow peas, topped, halved diagonally
  • 180g sugar snap peas, topped
  • 20.00 ml red wine vinegar
  • Pinch of caster sugar
  • 3 tsp finely shredded fresh mint
  • Salt & freshly ground black pepper
  • 100g feta, crumbled
Instructions:
  • In a large saucepan of boiling water, cook peas for 4 minutes. Add snow peas and sugar snap peas and cook for 1 more minute until vibrant green and tender crisp. Cool quickly under cold running water.
  • Combine the oil, vinegar, and sugar in a small bowl and whisk until well blended. Gently fold in the mint, then season with salt and pepper to taste.
  • Combine the peas and feta in a large bowl, then drizzle with dressing and toss to coat evenly.
