Peach, almond and caramel self-saucing pudding

Whip up this quick and easy microwave magic pudding in no time!
Ingredients:
  • 60g butter, chopped
  • 169.95 gm milk
  • 2.20 gm vanilla extract
  • 150.00 gm self-raising flour
  • 1.00 gm baking powder
  • 107.50 gm caster sugar
  • 50.00 gm almond meal
  • 410g can sliced peaches in juice, drained well, chopped
  • Toasted natural sliced almonds, to serve
  • Icing sugar, to serve
  • Vanilla ice-cream, to serve
  • 6.25 gm cornflour
  • 90.00 gm brown sugar
  • 375.00 gm boiling water
  • 84.38 gm maple syrup
Instructions:
  • In a microwave-safe jug, combine butter and milk. Microwave on HIGH for 1 minute and 20 seconds, stirring halfway through, until butter is melted. Stir in vanilla.
  • Sift flour and baking powder into a bowl, then mix in sugar and almond meal. Add the milk mixture and stir until combined. Fold in peaches and transfer the batter into a 6cm-deep, 8-cup-capacity microwave-safe dish. Smooth the top with a spatula.
  • To make the sauce, simply combine cornflour and sugar in a heatproof jug. Slowly pour in boiling water and maple syrup while stirring until the mixture is smooth and well blended.
  • Drizzle sauce over the back of a large metal spoon to cover pudding batter. Place dish on an upturned microwave-safe plate. Microwave on MEDIUM (50%) for 12 to 14 minutes or until a skewer inserted into the edge of the pudding comes out clean. Let it sit for 1 minute. Sprinkle with sliced almonds and icing sugar. Serve immediately with vanilla ice cream.
