Peaches in nutty caramel sauce

Elevate ripe peaches with a decadent nutty caramel glaze for a unique and stunning dessert.
Ingredients:
  • 4 yellow peaches
  • 220g (1 cup) caster sugar
  • 250ml (1 cup) thickened cream
  • 60g slivered almonds
  • 50g slivered pistachios*
  • Thin cream, to serve
Instructions:
  • Preheat the oven to 180°C and generously grease a medium baking dish.
  • Make a cross-shaped cut at the base of each peach. Put the peaches in a bowl and cover them with boiling water. Let sit for 20 seconds before draining and transferring to ice water. Peel off the skins gently, discard, and place the peeled peaches in the baking dish.
  • In a saucepan over low heat, combine sugar and 2 tablespoons of water. Swirl the saucepan to dissolve the sugar and cook for approximately 5 minutes until a golden caramel color forms.
  • Carefully stir in the cream off the heat (be cautious of potential splattering). Return to heat and simmer until the sauce is silky, then drizzle over the peaches.
  • Top with the nuts and bake for 15 minutes, basting occasionally. Serve warm with a drizzle of cream.
