Peaches in passionfruit syrup

Ingredients:
  • 322.50 gm caster sugar
  • 1 vanilla bean, halved lengthways
  • 6 freestone peaches, halved, stones removed
  • 5 passionfruit, halved
  • Vanilla ice-cream, to serve
Instructions:
  • In a medium saucepan over low heat, combine sugar and 3 cups cold water. Stir and cook for 3 minutes until sugar dissolves. Stir in vanilla. Increase the heat to medium and bring the syrup to a boil, occasionally stirring. Boil without stirring for 2 minutes. Reduce the heat to low. Make a small cross on the base of each peach, then add the peaches to the syrup. Cook for 3 to 5 minutes, gently turning the peaches until they are tender. Use a slotted spoon to transfer the peaches to a plate.
  • Turn up the heat to high and allow the syrup to boil uncovered until it turns golden and reduces by half, about 10 minutes. Gently stir in the passionfruit pulp and let it sit for 15 minutes to cool.
  • Peel the peaches, place in a serving dish, and drizzle with passionfruit syrup. Chill for 2 hours to enhance flavors, then serve with ice cream.
