Easy, mouthwatering peach crumb bars: Delicious peach pie flavor with fuss-free prep. One dough does it all for a delectable treat to enjoy and gift.
Ingredients:
  • For the crust and crumb topping
  • 1 3/4 cups (230g) all-purpose flour
  • 3/4 cup (150g) granulated sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 sticks (12 tablespoons) cold unsalted butter, cubed, plus more for greasing the pan
  • 2 teaspoons vanilla extract
  • For the peach filling
  • 1 egg
  • 1/4 cup sour cream
  • 1/2 cup (100g) granulated sugar
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon kosher salt
  • 3 medium peaches (about 1 pound), pitted and sliced thinly
Instructions:
  • Heat your oven to 375°F, position a rack in the center, and prepare an 8x8-inch pan by greasing it with butter and lining the bottom and two sides with parchment paper, leaving an overhang.
  • Prepare the crust and crumb topping by combining flour, sugar, salt, and cinnamon in a large bowl. Add cold, cubed butter and vanilla extract, then use your fingers to blend them until the mixture holds together when squeezed. Reserve 3/4 cup for the topping. Press the rest into the pan to form a firm layer before moving on to the peach filling.
  • Prepare the peach filling: Combine egg, sour cream, sugar, flour, vanilla extract, cinnamon, and salt in a bowl. Gently mix in the sliced peaches until well combined. Spread the peach filling evenly over the crust.
  • Sprinkle the reserved 3/4 cup crumb topping evenly over the peach mixture. For larger crumb pieces, gently squeeze the mixture in your hand before sprinkling, aiming for pea-sized pieces.
  • Bake the bars in the oven until the crumble turns a pale golden color and becomes crisp, approximately 50 minutes. Let the pan cool on a wire rack for at least 1 hour before slicing and serving. Store the bars in an airtight container at room temperature for up to 5 days or refrigerate for up to a week. For longer storage, freeze the bars after cutting into squares for up to 3 months.
