Easy peach pie made with refrigerated crust and frozen peaches, best served with vanilla ice cream.
Ingredients:
  • 2 sheets refrigerated pie crust
  • 2 teaspoons all-purpose flour, or as needed
  • 2 pounds sliced frozen peaches
  • 0.5 cup white sugar
  • 1 teaspoon lemon juice
  • 0.5 teaspoon ground cinnamon
  • 3 tablespoons cornstarch
  • 1 large egg, beaten
  • 1 tablespoon coarse sparkling sugar
Instructions:
  • Bring the pie crusts to room temperature for about 15 minutes as per manufacturer's recommendation.
  • Preheat the oven to 400°F (200°C) for a perfectly heated cooking environment.
  • Unwrap the pie crusts and lay one on a floured surface. Sprinkle flour over both sides of the dough. Place the dough in a 9-inch pie pan, molding and stretching it to reach the top edge.
  • In a large bowl, combine frozen peach slices with sugar, cornstarch, lemon juice, cinnamon, and salt.
  • Spread the peach mixture evenly into the pie crust, smoothing out the top with the back of a spoon. The peach slices should still be frozen.
  • Carefully unfurl the second piece of dough onto the floured work surface. Place it over the peaches, making sure it hangs evenly over the edge of the pan on all sides.
  • Gently brush the pie's top with beaten egg, neatly tuck the edges of the crust underneath following the pan's edge as a guide. Press the top and bottom crusts together to create a beautifully crimped edge. Lightly shield the edge with foil strips to avoid excess browning.
  • Using a sharp knife, create slits in the top crust and generously sprinkle sparkling sugar over it.
  • Place the pie on a baking sheet and bake in a preheated oven for 1 hour, or until golden and bubbling.
  • Allow to cool on a rack for approximately 30 minutes before serving warm.
