Peaches or nectarines in strawberry syrup

Savor the sweetness of summer stonefruit in this indulgent treat.
Ingredients:
  • 2 lemons
  • 165g (3/4 cup) sugar
  • 250mls (1 cup) white wine
  • 310ml (1 1/4 cups) water
  • 1 cinnamon stick
  • 500g (2 punnets) strawberries, hulled
  • 4 medium peaches or nectarines
  • Thick cream, to serve
Instructions:
  • Peel the rind from 1 lemon using a vegetable peeler. Combine the lemon rind strips, sugar, white wine, water, and cinnamon stick in a saucepan. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves.
  • Juice the lemons first. Combine the lemon juice with strawberries in a food processor and blend until smooth. Mix the strawberry puree into the sugar syrup. Cook peaches or nectarines in the syrup until tender, about 10-15 minutes. Gently simmer the fruit, turning occasionally, then remove with a slotted spoon and let cool.
  • Bring the syrup back to a gentle simmer for 10-15 minutes until it thickens slightly. Peel and discard the skin from the peaches or nectarines. Serve the fruit with the strawberry syrup and cream.
