Whip up delicious no-bake peanut butter balls in minutes.
Ingredients:
  • 0.5 cup butter, softened
  • 2 teaspoons vanilla extract
  • 0.125 teaspoon salt
  • 2 cups creamy peanut butter
  • 2 cups confectioners' sugar
  • 2 cups chopped pecans
  • 2.5 cups graham cracker crumbs
  • 1 cup confectioners' sugar
  • 2 cups semisweet chocolate chips
  • 2 tablespoons shortening
Instructions:
  • Combine the butter, vanilla, salt, and peanut butter until creamy. Mix in 2 cups of confectioners' sugar, nuts, and almost all of the graham cracker crumbs. Use the remaining 1/2 cup of graham cracker crumbs if necessary for shaping the mixture into balls.
  • Shape the mixture into 1-inch balls by hand. Coat each ball in the leftover cup of confectioners' sugar. Place the balls in a single layer on a baking sheet and refrigerate until firm. Optional: Dip the cookies in melted chocolate or leave them plain. Store in the refrigerator in an airtight container.
  • Melt the chocolate chips and shortening in the top of a double boiler until smooth. Remove from heat and keep warm. Insert a toothpick into the chilled balls and dip them into the chocolate until coated. Place on waxed paper to set.
