Irresistible banana peanut butter muffins with a crunchy streusel topping - a beloved go-to treat.
Ingredients:
  • 1 cup all-purpose flour
  • 0.75 cup quick cooking oats
  • 0.33300000429153 cup packed brown sugar
  • 1 tablespoon baking powder
  • 1 cup milk
  • 0.5 cup peanut butter
  • 0.5 cup mashed ripe banana
  • 1 large egg, beaten
  • 2 tablespoons vegetable oil
  • 0.25 cup all-purpose flour
  • 2 tablespoons butter, melted
  • 2 tablespoons packed brown sugar
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin by greasing or lining with paper liners.
  • For the muffins: In a bowl, mix together flour, oats, brown sugar, and baking powder. In another bowl, whisk milk, peanut butter, banana, egg, oil, and vanilla. Combine banana mixture with dry ingredients until just moistened. Fill muffin cups 3/4 full and bake.
  • Prepare the crumb topping by mixing flour, melted butter, and brown sugar until combined. Sprinkle the mixture evenly over the muffins.
  • Bake in a hot oven until beautifully golden and a toothpick inserted in the center comes out clean, which should take around 18 minutes. Enjoy while warm.
