Enhance chocolate cupcakes with a gooey peanut butter cup center and a caramelized peanut butter frosting!
Ingredients:
  • 0.5 cup unsweetened cocoa powder
  • 0.5 teaspoon baking soda
  • 0.5 cup milk
  • 0.25 cup vegetable oil
  • 1 egg
  • 0.5 teaspoon vanilla extract
  • 0.5 cup boiling water
  • 14 miniature peanut butter cup candies
  • 4 egg whites
  • 1 tablespoon peanut butter
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and prepare a muffin tin with 14 paper liners.
  • In a large bowl, combine flour, 1 cup sugar, cocoa powder, baking powder, baking soda, and salt. Add milk, vegetable oil, 1 egg, and vanilla extract. Mix with an electric mixer on low speed until just combined, then increase to medium speed and mix thoroughly.
  • Gradually add boiling water to flour mixture on low speed. Increase to medium speed and beat for 1 minute.
  • Divide the batter evenly among the muffin cups, placing a peanut butter cup in the center of each.
  • Bake until tops spring back when lightly pressed, about 20 minutes. Let cool in pan for 5 to 10 minutes, then cool completely on a rack before frosting.
  • Position the oven rack 6 inches from the heat source and preheat the broiler.
  • Combine egg whites and sugar in a bowl until just mixed. Transfer mixture to a small saucepan and heat over medium heat until sugar dissolves. Return mixture to bowl and whisk on high speed until stiff peaks form.
  • In a microwave-safe bowl, warm the peanut butter in 15-second intervals on high, stirring each time, until the peanut butter reaches a smooth and creamy consistency. Carefully fold the melted peanut butter into the egg whites, then transfer the peanut butter frosting to a piping bag.
  • Frost the cooled cupcakes using a piping bag.
  • Broil cupcakes until golden brown, approximately 1 minute.
