Decadent peanut butter ice cream with chunks of chocolate peanut butter cups.
Ingredients:
  • 0.25 cup sugar
  • 3 eggs
  • 1 cup whole milk
  • 0.75 cup peanut butter
  • 0.75 cup sweetened condensed milk
  • 0.5 cup half-and-half cream
  • 2 teaspoons vanilla extract
  • 12 miniature peanut butter cups, chopped
Instructions:
  • Whisk sugar and eggs until thick. Simmer milk, then gradually whisk into the eggs. Cook gently, stirring constantly, until thickened. Be careful not to boil.
  • Whisk in the peanut butter off the heat. Let it cool slightly, then mix in the sweetened condensed milk, half-and-half, and vanilla. Cover and chill in the refrigerator.
  • Transfer the mixture to an ice cream maker and freeze as per the manufacturer's instructions. Gently fold in peanut butter cups while the mixture is soft, then transfer to a container and freeze until firm.
