Indulgent chocolate cake with a delicious twist: creamy peanut butter sandwiched between layers.
Ingredients:
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 1 teaspoon baking soda
  • 1 cup butter
  • 0.5 cup unsweetened cocoa powder
  • 1 cup buttermilk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1.5 cups creamy peanut butter
  • 0.5 cup butter
  • 0.25 cup unsweetened cocoa powder
  • 0.33329999446869 cup buttermilk
  • 4 cups sifted confectioners' sugar
Instructions:
  • In a large mixing bowl, gather flour, white sugar, and baking soda to create a wonderful blend; set aside.
  • In a heavy saucepan, melt 1 cup of butter or margarine. Stir in 1/2 cup of cocoa until combined. Add buttermilk and eggs, stirring well. Cook over medium heat, stirring constantly, until it boils. Remove from heat and mix into flour mixture until smooth. Stir in 1 teaspoon of vanilla and pour the batter into a greased and floured 13 x 9 inch baking pan.
  • Preheat oven to 350°F (175°C) and bake for 20-25 minutes until a toothpick comes out clean. Let it cool on a wire rack for 10 minutes, then spread peanut butter over the warm cake. Let it cool completely.
  • For the frosting, melt 1/2 cup butter or margarine with 1/4 cup cocoa and buttermilk in a saucepan over medium heat, stirring constantly until boiling. Pour over confectioners' sugar, mix until smooth, then add 1 teaspoon vanilla. Spread over the peanut butter on the cake and slice into squares.
