Peanut crunch truffles

Easy-to-make chocolate bites, perfect for gifting.
Ingredients:
  • 220g milk chocolate block, chopped
  • 126.25 gm thickened cream
  • 41.60 gm crunchy peanut butter
  • 250.00 ml pretzels, crushed (see Notes)
  • 180g dark chocolate block, chopped
  • Extra 100g milk chocolate block, chopped
  • Sea salt, to decorate
Instructions:
  • Melt milk chocolate, cream, and peanut butter together in a heatproof bowl over simmering water. Stir until smooth, then refrigerate for 10 minutes. Mix in pretzels and refrigerate for 30 minutes until firm.
  • Shape 2 level teaspoons of chocolate mixture into a ball and place on a tray lined with baking paper. Continue making 30 balls with the remaining mixture. Freeze for 30 minutes until firm.
  • 1. Place the dark chocolate in a microwave-safe bowl and melt it in the microwave, stirring every 30 seconds until smooth. 2. Let the melted chocolate rest for 1 minute. 3. Dip the truffles into the chocolate one at a time to coat them. 4. Use a fork to lift the truffles out, letting the excess chocolate drip off. 5. Place the coated truffles back on the tray. 6. Refrigerate for 10 minutes before serving.
  • Add more milk chocolate into a microwave-safe bowl. Microwave on HIGH for 30 seconds or until it's melted. Transfer the melted chocolate to a snap-lock bag. Cut off a corner of the bag. Squeeze the chocolate onto the truffles. Sprinkle with sea salt. Chill in the refrigerator for 15 minutes until it sets. Serve and enjoy.
