Peanut-Free Chocolate Macaroons

Delicious no-bake chocolate macaroons with oats and coconut, also known as "Frogs and Haystacks".
Ingredients:
  • 2.5 cups rolled oats
  • 0.5 cup cocoa powder
  • 0.5 cup flaked coconut
  • 1.5 cups white sugar
  • 0.5 cup milk
  • 0.5 cup butter
  • 1 teaspoon vanilla extract
Instructions:
  • Cover your work surface with waxed paper.
  • Combine oats, cocoa powder, and coconut in a large bowl, mixing well.
  • Combine sugar, milk, and butter in a nonstick pot and bring to a boil, stirring constantly until sugar is fully dissolved, approximately 2 minutes. Remove from heat and stir in vanilla extract.
  • Combine the oats with the butter mixture until fully incorporated. Spoon the mixture onto waxed paper and allow it to set for a minimum of 15 minutes.
