Pear, almond & chocolate torte

Indulge in the irresistible blend of juicy pear and rich chocolate for a divine treat.
Ingredients:
  • 150g salted butter
  • 1 vanilla bean, seeds scraped
  • 5 egg whites
  • Pinch salt
  • 350g icing sugar
  • 120g plain flour
  • 100g almond meal
  • 50g flaked almonds
  • 100g dark chocolate, roughly chopped, plus extra grated for serving
  • 2 pears, peeled and sliced 5cm thick
Instructions:
  • Preheat your oven to 170C (150C fan) and generously grease a 24cm x 5cm fluted tart pan with a removable base.
  • In a small saucepan, combine the vanilla beans and butter. Melt the butter over medium heat, cooking gently for 4-5 minutes until the mixture darkens and becomes nutty.
  • Pour the melted butter through a strainer into a bowl, leaving behind the solids. Allow the butter to cool to room temperature.
  • Whisk egg whites with a pinch of salt until soft peaks form. Gradually add in half of the icing sugar and blend well. Gently fold in the rest of the sugar, flour, and ground almonds.
  • Incorporate the caramelized vanilla butter into the mixture. Transfer to the pan and arrange sliced pears and chocolate chunks on top, then sprinkle with almond flakes.
  • Bake the tart for 1 hour until puffed and perfectly set. Cool to room temperature after removing from the oven.
  • Sprinkle with powdered sugar and top with grated dark chocolate.
