Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon apple pie spice
  • 1/2 cup cold unsalted butter
  • 3 tablespoons granulated sugar
  • 3 tablespoons packed light brown sugar
  • 3 large Gala or Golden Delicious apples
  • 3 large ripe but firm pears
  • 2 tablespoons butter
  • 2 tablespoons granulated sugar
  • 1/4 cup fresh lemon juice
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 375°F. Combine flour, baking powder, and apple pie spice in a medium bowl. Use a pastry blender or 2 knives to cut in 1/2 cup of butter until the mixture resembles rolled oats. Mix in 3 tablespoons of granulated sugar and brown sugar, then set aside.
  • Peel and core the apples, then cut them into quarters and slice each quarter in half crosswise. Repeat the same process with the pears. In a 4-quart Dutch oven, mix together 2 tablespoons of butter, 2 tablespoons of granulated sugar, and 2 tablespoons of lemon juice. Heat the mixture over medium heat until the butter is melted, then add the apples. Cook for 5 minutes, stirring occasionally with the pot slightly covered.
  • Add in the pears and cook for 1 to 2 minutes, adjusting for ripeness. Combine 2 tablespoons lemon juice, cornstarch, and cinnamon in a small bowl; mix this into the fruit. Cook and stir constantly for 2 to 3 minutes until thickened.
  • Transfer the fruity mixture into an ungreased 9 1/2-inch glass deep-dish pie plate. Spread the topping evenly over the fruit. Set the pie plate on a cookie sheet.
  • Bake until topping is golden brown, fruit is bubbly. Serve warm or cool.
