Pear and Blueberry Cake

Indulgent pear and blueberry crumb cake, perfect with a dollop of whipped cream and extra berries.
Ingredients:
  • 1.5 tablespoons brown sugar
  • 1.5 tablespoons white sugar
  • 1 teaspoon cinnamon
  • 1.25 cups all-purpose flour
  • 0.5 cup unsalted butter
  • 1.25 cups white sugar
  • 3 large eggs
  • 0.33333334326744 cup milk
  • 1 teaspoon almond extract
  • 3 pears, peeled and diced
  • 0.5 cup blueberries
  • 0.5 cup almonds, chopped
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan by greasing and flouring it. Mix 1 1/2 tablespoons each of brown sugar and white sugar with 1 teaspoon of cinnamon in a small bowl; set aside.
  • Combine flour, 1 teaspoon cinnamon, and baking powder in a large bowl. In another large bowl, cream together butter and 1 1/4 cups white sugar using an electric mixer until light and fluffy. Add eggs one at a time. Gradually mix in flour mixture, alternating with milk, until combined. Stir in almond extract.
  • Incorporate pears, blueberries, and chopped almonds into the batter with care. Transfer the mixture into the prepared pan. Sprinkle the remaining sugar and cinnamon mixture over the cake batter.
  • Bake in a preheated oven for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean.
