Pear and pecan muffins

Sweet pears enhance these delectable oat and pecan muffins.
Ingredients:
  • 65g oats
  • 150g self-raising flour
  • 110g brown sugar
  • 1.25 gm bicarbonate of soda
  • 60g pecan
  • 1 pear, grated (about 1/2 cup)
  • 60ml vegetable oil
  • 250ml buttermilk
  • 1 Free Range Egg, lightly whisked
  • 10.00 gm Uncle Toby’s Traditional Oats, extra
  • 1/2 pear, extra, cut into matchsticks
Instructions:
  • Preheat your oven to 180C and line a 1/3-cup (80ml) muffin pan with paper cases for 12 muffins.
  • Grind the oats in a blender or food processor until finely ground. Combine them in a large bowl with the flour, sugar, baking soda, and half of the pecans. Create a well in the center.
  • In a jug, mix the pear, oil, buttermilk, and egg together. Pour this mixture into the flour well, stirring gently until just combined (avoid overmixing to keep the muffins tender).
  • Evenly distribute the pear mixture into the prepared pans. Sprinkle with extra oats, remaining pecans, and extra pear. Bake for 25 minutes or until a skewer comes out clean. Allow to cool on a wire rack and serve warm or at room temperature.
