Ingredients:
  • 40g butter
  • 2 shallots,\tchopped
  • 3 rashers bacon, rind removed, chopped
  • 500g frozen peas
  • 62.50 ml chopped parsley
  • 62.50 ml chopped mint
Instructions:
  • In a pan over medium heat, melt 20g of butter. Saute shallot until soft, around 3 minutes. Stir in bacon and cook until browned, about 2-3 minutes. Add peas and 1/2 cup water, cover, and simmer until peas are tender, 3-5 minutes.
  • Take the pan off the heat and sprinkle in the herbs and the rest of the butter. Mix everything together until well combined.
