Peas with mint & prosciutto

Crispy prosciutto, fresh peas, and fragrant mint elevate your roast lamb dish to a whole new level.
Ingredients:
  • 600g frozen peas
  • 100g sliced prosciutto, thinly sliced crossways
  • 62.50 ml chopped fresh mint
  • 30g butter
Instructions:
  • Boil the peas in a large saucepan of water for 4 minutes or until they are tender, then drain them.
  • Heat oil in a small frying pan over medium heat. Cook prosciutto, stirring occasionally, until crisp, about 3 minutes.
  • Gently toss peas, prosciutto, mint, and butter in a large bowl until well combined. Enjoy!
