Chilean salsa pepre made with rehydrated aji pepper. Enjoy with bread, eggs, meats, fish, or cheese.
Ingredients:
  • 1 dried aji pepper, seeded
  • 1 Roma tomato, quartered
  • 1 small onion, peeled and quartered
  • 0.5 cup fresh cilantro, stems removed
  • 1 clove garlic, peeled
  • 0.5 lime, juiced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • salt and pepper to taste
  • 1 jalapeno pepper, sliced
Instructions:
  • Soak aji pepper in hot water for 15 minutes, then drain.
  • In a food processor, blend together tomato, onion, and cilantro until finely chopped. Add garlic and pulse briefly. Pour in drained pepper, lime juice, red wine vinegar, and olive oil. Blend until smooth. Season with salt and pepper to taste.
  • Combine the pebre with a gentle stir, then garnish with sliced jalapeno before serving.
