Delicate melt-in-your-mouth Tea Cakes made with cake flour. A must-try twist on a classic!
Ingredients:
  • 0.5 cup butter, softened
  • 2 tablespoons white sugar
  • 1 cup sifted cake flour
  • 1 cup pecan halves
  • 0.5 cup confectioners' sugar for rolling
Instructions:
  • Preheat the oven to a toasty 300 degrees F (150 degrees C) and generously grease the cookie sheets.
  • In a medium bowl, mix together smooth butter and sugar. Add vanilla. In a food processor or blender, grind pecans and toss with cake flour. Combine pecan mixture with creamed mixture. Roll into tablespoon balls and place 1 inch apart on cookie sheets.
  • Bake for 20-25 minutes in a preheated oven until lightly browned. While warm, coat the cookies in confectioners' sugar, then coat them again once cooled.
