Pecan Wafer Cookies

Experience the convenience of refrigerator cookies - slice and bake only what you need!
Ingredients:
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 3/4 cup butter or margarine, softened
  • 1/4 cup powdered sugar
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon baking powder
  • 1 egg
  • 1/2 cup finely chopped pecans, toasted
  • 48 pecan halves (about 2/3 cup)
Instructions:
  • Combine all ingredients, excluding pecans, in a large bowl. Mix with an electric mixer on medium speed until well combined. Gently fold in chopped pecans.
  • Place the dough on a 14-inch piece of plastic wrap and use the wrap to form the dough into a 12x2-inch log. Wrap it tightly in the plastic wrap and refrigerate for at least 2 hours until firm.
  • Preheat oven to 375°F. Slice dough into 1/4-inch rounds using a sharp knife. Arrange slices on an ungreased cookie sheet, spacing them 1 inch apart. Top each cookie with a pecan half.
  • Bake for 8 to 10 minutes until edges are golden brown. Let cool for 1 minute, then transfer from the baking sheet to a cooling rack.
