Peppered Pork Medallions in Tangy Mushroom Sauce

Delicious mushroom sauce elevates spicy pork tenderloin. Ready in just 30 minutes - a must-try!
Ingredients:
  • 1 pork tenderloin (1 to 1 1/4 lb)
  • 1 teaspoon mixed-pepper seasoning
  • 2 teaspoons vegetable oil
  • 1 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons dried rosemary leaves, crumbled
  • 1 package (8 oz) fresh whole mushrooms
Instructions:
  • Cut the pork into four 4-oz pieces. Place the pork pieces between plastic wrap or waxed paper and use a meat mallet to flatten them to a thickness of less than 1/2 inch and about 4x3 1/2 inches in diameter.
  • Season both sides of the pork medallions generously with the flavorful mixed-pepper seasoning and salt, pressing the seasonings into the meat. Heat oil in a spacious nonstick skillet over medium-high heat, then add the pork. Sear for about 5 minutes, flipping once, until beautifully browned.
  • In a small bowl, whisk together the broth and flour until smooth. Pour the broth mixture into the skillet along with the rest of the ingredients. Bring it to a boil, then reduce the heat, cover, and cook for 8 to 10 minutes. Stir occasionally until the pork is cooked through and the mushrooms are tender.
