Delicious pork and pecan sandwiches made with Bisquick® mix, perfect for any occasion.
Ingredients:
  • 1 package (2 lb) pork tenderloins
  • 2 teaspoons pepper
  • 1 teaspoon salt
  • 1 package fast-acting dry yeast
  • 1 tablespoon sugar
  • 3/4 cup warm water (105°F to 115°F)
  • 1 box (20 oz) Original Bisquick™ mix
  • 1/2 cup chopped pecans
  • 1 cup buttermilk
  • 1/4 cup butter, melted
  • 2 tablespoons refrigerated basil pesto
  • 1/2 cup Gold Medal™ all-purpose flour
  • Country-style Dijon mustard
Instructions:
  • Preheat oven to 450°F. Grease roasting pan rack lightly with vegetable oil or shortening. Season pork with pepper and salt, then place on the rack in the pan. Roast for 20 to 25 minutes until cooked to a slight blush of pink in the center and the meat thermometer reads 145°F. Allow the pork to rest for 10 minutes before slicing thinly and covering to keep warm. Lower oven temperature to 425°F.
  • Lightly spray cookie sheets with cooking spray. In a large bowl, combine yeast, sugar, and warm water; allow to sit for 5 minutes. Stir in Bisquick mix, pecans, buttermilk, butter, and pesto until dry ingredients are moistened. Add flour as needed (up to 1/2 cup) until dough pulls away from the sides of the bowl. Gently knead the dough 2 to 3 times on a lightly floured surface. Pat or roll out the dough to 1-inch thickness and cut with a 1 1/2-inch round cutter. Transfer biscuits to the prepared cookie sheets.
  • Bake until golden brown, about 10 to 12 minutes. Split the warm biscuits and fill with sliced pork, serve with mustard on the side.
