Indulgent peppermint chocolate brownies with a rich ganache topping - a festive treat for any dessert spread.
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon salt
  • 2 cups white sugar
  • 0.75 cup cocoa powder
  • 1 cup unsalted butter, melted
  • 4 large eggs
  • 1 teaspoon peppermint extract
  • 0.25 cup unsalted butter
  • 2 cups powdered sugar
  • 1 tablespoon milk
  • 1.5 teaspoons peppermint extract
  • 1 drop red food coloring, or as needed
  • 1 teaspoon milk
  • 1 cup whipping cream
  • 10 (1 ounce) squares bittersweet chocolate, chopped
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while giving your 9-inch square baking pan a quick spritz with cooking spray.
  • In a bowl, mix flour and salt. In another bowl, combine sugar and cocoa powder for brownies. Stir in melted butter using an electric mixer until well combined. Add eggs and peppermint extract; mix well. Gently fold in the flour mixture until just combined. Pour the batter into the prepared baking pan.
  • Bake in the oven until the top is dry and edges begin to pull away from the sides of the pan, 40 to 50 minutes. Allow to cool for about 20 minutes.
  • As brownies cool, in a large bowl, whip butter for frosting. Gradually incorporate powdered sugar, 1/2 cup at a time. Mix in 1 tablespoon milk, peppermint extract, and food coloring until smooth. If frosting is too thick, add 1 teaspoon milk. Spread on cooled brownies and chill to set.
  • In a saucepan, gently simmer cream and butter. Take off heat, add chocolate, and stir until smooth. Chill in the freezer for about 35 minutes, stirring every 10 minutes to maintain a creamy texture.
  • Generously slather the rich ganache over the decadent brownies.
