Delicious fall dish that perfectly balances sweet and salty flavors, simple to prepare.
Ingredients:
  • 2 medium zucchini
  • 0.33333334326744 cup diced onion
  • 12 slices pepperoni sausage, diced
  • 0.5 cup grated Asiago or Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Halve the zucchini lengthwise and scoop out most of the insides using a metal spoon, placing them into a skillet. Then, transfer the zucchini shells to a baking sheet.
  • Heat up a skillet on medium heat, and sauté the onion and pepperoni for about 3 minutes. Take the skillet off the heat and fill the zucchini shells with the mixture. Top with cheese before serving.
  • Place in a hot oven for 12 minutes.
