Spicy cream cheese and sausage stuffed peppers - perfect as a side dish or appetizer with a kick!
Ingredients:
  • 4 large Cubanelle peppers, stemmed and seeded
  • 1 pound mild Italian pork sausage
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup pasta sauce, or to taste
  • 2 tablespoons grated Parmesan cheese, or to taste
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and cover a baking sheet with foil.
  • Bring a large pot of water to a rolling boil, then carefully add the peppers. Turn off the heat and allow the peppers to soak until slightly softened, approximately 5 minutes. Remove peppers and set aside to cool before handling.
  • Combine the sausage and cream cheese in a bowl until well mixed while allowing the peppers to cool.
  • Stuff peppers with delicious sausage filling, arrange on baking sheet. Roll extra filling into savory meatballs, place next to peppers. Top with pasta sauce and sprinkle with Parmesan cheese for extra flavor.
  • Bake in the preheated oven for about 35 minutes, until the sausage mixture begins to turn golden brown and an instant-read thermometer inserted into the center reads at least 160°F (71°C).
