Indulgent red velvet cheesecake cookie bars with rich chocolate and creamy cheesecake on a cookie crust.
Ingredients:
  • 1 (17.5 ounce) pouch double chocolate cookie mix (such as King Arthur Flour®)
  • 0.5 cup butter
  • 1 egg
  • 4 drops red food coloring, or more as needed
  • 2 (8 ounce) packages cream cheese, softened
  • 3 eggs
  • 2 tablespoons all-purpose flour
  • 0.5 cup heavy whipping cream
  • 2 teaspoons vanilla extract
  • 1 cup milk chocolate chips
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and generously butter a 9x13-inch baking pan.
  • Combine cookie mix, 1/2 cup butter, 1 egg, and food coloring in a bowl until just mixed. Spread the cookie dough evenly in the prepared pan.
  • In a bowl, combine cream cheese, sugar, 1/2 cup butter, and 3 eggs using an electric mixer on medium-high speed until smooth. Add flour, heavy cream, and vanilla extract; mix for about 2 minutes. Pour cheesecake mixture over the cookie dough layer in the pan.
  • Bake in the preheated oven for 30-45 minutes until the cheesecake layer is lightly golden and set. Allow to cool before serving.
  • In a microwave-safe bowl, gently melt the chocolate in 30-second intervals, stirring after each until smooth, for a total of about 90 seconds. Drizzle the melted chocolate over the chilled cheesecake, cover with plastic wrap, and refrigerate until firm. Slice into bars and store in the fridge.
