Crispy fried green tomatoes with Cajun-spiced ranch dipping sauce - a simple and impressive dish.
Ingredients:
  • 4 green tomatoes, cut into 1/4-inch slices
  • 1 cup all-purpose flour
  • 2 teaspoons salt, divided
  • 2 teaspoons ground black pepper, divided
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 2 cups canola oil, or as needed
  • 0.5 cup ranch dressing
  • 2 tablespoons Cajun seasoning
  • 2 teaspoons hot pepper sauce
Instructions:
  • Sprinkle salt and pepper over tomato slices.
  • In separate shallow bowls, prepare the dredging station: mix flour with 1 teaspoon each of salt and pepper in one bowl, pour buttermilk into another bowl, and combine cornmeal with parsley, paprika, 1 teaspoon each of salt and pepper, and cayenne pepper in a third bowl.
  • Coat each tomato slice with flour mixture, dip in buttermilk, and press into cornmeal mixture. Place on a baking sheet and let rest for 10 to 15 minutes to absorb the coating.
  • Bring the oil in a deep-fryer or large saucepan to a perfect 350 degrees F (175 degrees C).
  • Carefully immerse tomato slices into the sizzling oil and fry until they turn a beautiful golden brown and start to float, typically around 2 to 3 minutes. Place them on a paper towel-lined plate to absorb any excess oil.
  • Combine ranch dressing, Cajun seasoning, and hot pepper sauce in a small bowl; serve with fried tomato slices.
