Perfect roast beef

Foolproof succulent roasted beef.
Ingredients:
  • 1.5 kg topside of beef
  • 2 medium onions
  • 2 carrots
  • 2 sticks celery
  • 1 bulb of garlic
  • 1 bunch of mixed fresh herbs such as thyme, rosemary, bay, sage
  • olive oil
Instructions:
  • Remove the beef from the fridge 30 minutes before cooking to bring it to room temperature. Preheat the oven to 240°C/475°F/gas 9. Wash and roughly chop the vegetables without peeling. Break the garlic bulb into cloves, keeping them unpeeled. Place all the vegetables, garlic, and herbs in the center of a large roasting tray, then drizzle with oil. Drizzle oil over the beef, season generously with sea salt and black pepper, and rub all over the meat. Put the beef on top of the veggies. Place the tray in the oven, reduce the heat to 200°C/400°F/gas 6, and cook for 1 hour for medium beef. Adjust cooking time for medium-rare or well done preferences accordingly. Baste the beef halfway through cooking and add water to the tray if the veggies look dry. After cooking, rest the beef on a board covered with foil and a towel for 15 minutes while preparing gravy, horseradish sauce, and Yorkshire puddings.
