Elevate your roasted potatoes with expert tips and delicious seasonings for a crowd-pleasing side dish.
Ingredients:
  • 1.5 kg Maris Piper potatoes
  • 1 bulb of garlic
  • red wine vinegar
  • 3 tablespoons olive oil
  • 1 bunch of fresh rosemary
  • 50 g unsalted butter
  • 1 bunch of fresh sage
  • 1 clementine
  • 2 tablespoons goose fat
  • 1 bunch of fresh thyme
  • 2 fresh bay leaves
Instructions:
  • - Preheat the oven to 190ºC/375ºF/gas 5. - Peel and cut the potatoes into even-sized pieces. - Rinse potatoes in cold water, then parboil for 7 minutes and let steam dry for 3 minutes. - Shake the colander to roughen up the potatoes. - Spread potatoes on a tray, add your choice of fat, season with salt and pepper, and roast for 30 minutes. - Gently press each potato with a masher to increase crispiness. - Mix herbs, garlic, red wine vinegar, and zest in a bowl. - Add flavor combo to potatoes, shake the pan, and return to the oven for 40-45 minutes until crispy. - Drain on kitchen paper and enjoy!
