Bake perfect vegan sugar cookies that hold their shape well, ideal for festive decorating.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.75 cup white sugar
  • 0.5 cup vegan margarine (such as Earth Balance®)
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut milk
Instructions:
  • Combine the flour, baking soda, and salt by sifting them together into a bowl.
  • Using an electric mixer, beat sugar and vegan margarine in a mixing bowl until creamy, approximately 2 minutes. Incorporate vanilla, then mix in flour mixture until combined. Gradually add coconut milk, 1 tablespoon at a time, until dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes before using.
  • Preheat the oven to 350°F (175°C) and prepare two baking sheets with parchment paper.
  • Roll the chilled dough on a floured surface to a thickness of 1/4 to 1/2 inch. Use a floured cookie cutter to cut out cookies, flouring as needed, and place them on the baking sheets.
  • Bake in the preheated oven until lightly golden, approximately 10 minutes.
