Impress guests with these irresistible Vegan Sugar Cookies. Made with only plant-based ingredients, they are perfect for holiday parties. Easily customizable into festive shapes for a stunning presentation.
Ingredients:
  • 1 1/2 cups organic powdered sugar
  • 1 cup vegan margarine, softened
  • 1/4 cup vanilla soymilk
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 4 cups organic powdered sugar
  • 4 tablespoons vanilla soymilk
  • 1/2 teaspoon vanilla
Instructions:
  • Combine 1 1/2 cups powdered sugar, margarine, 1/4 cup soymilk, 1 teaspoon vanilla and almond extract in a large bowl. Mix with an electric mixer until combined. Add flour, cornstarch, baking soda, and cream of tartar, stir until blended. Refrigerate covered for at least 2 hours.
  • Preheat your oven to 375°F. Grease a cookie sheet lightly with shortening or cooking spray. Divide the dough in half, then roll each half to a 1/4-inch thickness on a generously floured surface. Use 2- to 2 1/2-inch cookie cutters to cut out the shapes. Arrange the cutouts on the cookie sheet about 2 inches apart.
  • Bake for 7 to 8 minutes, or until the edges turn a beautiful light brown. Transfer the cookies from the sheet to a cooling rack.
  • In a large mixing bowl, whisk together icing ingredients until smooth. If the icing is too thick, mix in an extra teaspoon of soymilk. Frost the cookies and sprinkle with vegan colored sugar, if desired.
