Mini shepherd's pies: Savory beef casserole topped with creamy mashed potatoes, served in personal-sized portions for ultimate comfort and enjoyment.
Ingredients:
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup frozen corn
  • 1 tablespoon ketchup
  • 2 cups prepared instant mashed potatoes
  • 0.75 cup shredded Cheddar cheese
Instructions:
  • Brown and crumble beef with onion in a large skillet over medium-high heat for about 5 minutes; discard grease after cooking.
  • Lower the heat and combine the condensed soup, corn, ketchup, and pepper with the beef. Heat them through for about 2 minutes. Divide the beef mixture into four 4-inch round baking pans and top with mashed potatoes. Transfer the pans onto a baking sheet.
  • Roast the potatoes in the oven until they turn a beautiful golden brown, approximately 15 minutes.
  • Position the oven rack 6 inches below the heat source and preheat the broiler in the oven.
  • Generously scatter cheese over pies for a mouthwatering cheesy topping.
  • Melt cheese under the preheated broiler for about 2 minutes. Let it cool for 5 minutes before serving.
